The Great Cookbook Giveaway

PBS Cooks is brand new– it just hit shelves in October 2009. Now you have a chance to win your very own copy just in time for Thanksgiving! We’re giving away 1 cookbook a day for the rest of the week. (Nov. 17th – 21st)

To Enter: If you’ve tried one of the recipes from the cookbook already, let us know which one and how you liked it! If you don’t have a cookbook already, post one of your own favorite recipes. We will randomly pick a winner each day from ALL comments posted. So you only have to comment once to be eligible all week long.

    One of my favorite recipes is for Banket Squares. It is a Scandanavian recipe that has been in our family for many years. We don’t make it too often due to the high cost of the almond paste. When we do make it, though, it always garners rave reviews. Enjoy!

    Banket Squares
    1/2# almond paste (at room temp.)
    2 sticks margarine or butter (room temp.)
    2 eggs (room temp.)
    2 c. sugar
    2 c. flour
    Cream together first 4 ingredients. Add flour, a little at a time. Lightly press into an ungreased 9×13″ pan. Bake in preheated 300° oven for 40-45 minutes. Should feel moist and only ever-so-slightly golden. Don’t let it dry out! Cut into squares while hot.

    I just tried this recipe yesterday as a treat for my daughter (11 months) who seems to love anything pumpkin. She loved it, but she may have to fight for more, because my husband and I like them, too! 🙂

    Pumpkin Muffins

    1 cup all purpose unbleached flour
    1/2 cup whole grain spelt flour (could sub whole wheat flour if desired)
    1/2 c sugar
    2 t baking powder
    1 t ground cinnamon
    1/2 t ground ginger
    1/4 t ground cloves
    1 large egg
    1/2 c milk
    1/2 c pumpkin, (packed solid)
    1/4 c butter, melted

    Preheat oven to 400. Lightly grease a muffin tin.
    Sift dry ingredients.
    In separate bowl, combine wet ingredients.
    Slowly add wet mixture to dry mixture, stirring only enough to wet dry mixture.
    Divide batter among the 12 muffin cups.
    Bake for 20-25 minutes or until golden brown.

    My husband brought to our marriage a favorite family recipe that he still drools for each time I make it. His family called it Chocolate Pudding Cake but many people confuse this with a more ordinary cake where pudding mix is added to the cake batter. This is not the cake I’m describing. This cake bakes up with a sweet and gooy pudding inside the cake. I call it HOT FUDGE CAKE.

    In a medium bowl combine:
    1 cup all purpose flour
    3/4 cup sugar
    2 tbsp. baking cocoa
    2 tsp baking powder
    1/4 tsp salt

    Stir in:
    1/2 cup milk
    2 tbsp vegetable oil (not olive oil)
    1 tsp vanilla extract

    Spread in an ungreased 9″ square baking pan

    Sprinkle over batter in pan:
    thoroughly mixed combination of 1 cup brown sugar, packed and 4 tbsp baking cocoa

    Pour 1 and 3/4 cup hot water over all. DO NOT STIR

    Bake at 350 degrees for 35 – 40 minutes

    Serve either warm or cold with a dollop of ice cream or whipped cream if desired.

    One of our family’s favorite recipes here in the south is for bbq pulled pork. It is so simple and yet so good. Purchase a butt pork roast, several pounds and place in a slow cooker/crock pot. Pour in 1 can or bottle of ginger ale. Set on high for 7 to 9 hours. Take 2 forks and start to pull the meat apart and then add a bottle of your favorite bbq sauce (sweet baby rays) and stir well. Cook another 1/2 to 1 hour and shoverl into some great buns. Eat as is or add some prepared cloe slaw for topping.

    Thanks very much for that! My father recently harvested a garden full of tomatoes before the winter really set in, and I found myself the owner of two or four buckets worth! Of course I couldnt eat them all like that, but I did find a website full of lots more tomato recipes at that site. A whole website dedicated the topic!! Crazy what you can find on the internets nowadays!!
